Apple Bread

3 eggs
1 c. vegetable oil
2 c. grated unpeeled apples
3 c. flour
1 tsp. salt
1 tsp. baking soda
2 tsp. cinnamon
1/4 tsp. baking powder
1 c. raisins

Mix the usual way. Batter makes
2 - 9x13 loaf pans. Bake at 325 degrees for 1 hour.
It is very moist and freezes well.
Apple Crisp

Apples
1 T. flour
1 c. sugar
1 t. cinnamon
3/4 stick of oleo (cut up)
1 c. oatmeal
1 c. brown sugar
1/4 c. flour
1 stick oleo

Peel enough apples to put in bottom of a cake pan. Sprinkle
1 T. flour, sugar, cinnamon and
3/4 stick of oleo over the apples. In a bowl mix oatmeal, brown sugar, 1/4 c. flour and 1 stick of oleo, then sprinkle over apples and bake at 350 degrees for one hour.
Indiana Crumb Top
Apple Pie
Filling -
2/3 c. sugar
1/2 t. cinnamon
1/4 t. nutmeg
8 large apples
2 T. water
2 T. lemonjuice
2 T. butter

Preheat oven to 350 degrees. In bowl comine sugar, cinnamon, and nutmeg. Add apples, sprinkle on water and lemon juice. Toss until evenly coated. Spoon into 9" pie pan. Dot with butter.

Crumb Topping -
1/2 c. packed brown sugar
1/2 c. softened butter
1 c. flour

Cream sugar and butter until light and fluffy. Add flour and stir until smooth. Daub on apples.
Bake 50 to 60 minutes.
Caramel Apple Cake
Cake
1 1/2 c. oil
1 1/2 c. sugar
1/2 c. packed brown sugar
3 eggs
3 c. flour
2 t. vanilla
2 t. cinnamon
1/2 t. nutmeg
1 t. Baking soda
1/2 t. salt
3 1/2 c. diced apples

Caramel Icing
1/2 c. packed brown sugar
1/3 c. light cream
1/4 c. butter
dash salt
1 c. powdered sugar
chopped walnuts, (optional)
In bowl, combine oil and sugars. Add eggs, one at a time, beating well after each. Combine dry ingredients; add to batter and stir well. Fold in apples, walnuts and vanilla. Pour into greased and floured 10" tube pan. bake at 325 degrees for 1 and 1/2 hours or until done. Cool in pan 10 minutes. Remove to
wire rack to cool completely.

In top of double boiler, heat brown sugar, cream, butter, and salt until sugar is dissolved. Cool to room temperature. Beat in powdered sugar until smooth. Drizzle over cake. Sprinkle with nuts. Serves 12 to 16.


Apple Dessert
3 cups sliced apples
1 c. sugar
1 1/2 T. flour
1/8 t. salt
cinnamon
Topping
3/4 c. flour
3/4 c. oatmeal
1/4 t. soda
1/4 t. baking powder
1/3 c. melted butter
3/4 c. brown sugar
Danish Apple Bars
2 1/2 c. flour
1 t. salt
1 c. shortening
1 egg yolk
1 c. corn flakes
8 to 10 tart apples
3/4 - 1 c. sugar
1 t. cinnamon
Mix and put in pan apples, sugar, flour, and salt. Top with brown sugar, flour, oatmeal, soda, baking powder and butter. Mix well and put over apple mixture. Bake at 350 degrees for about 45 minutes.
Sift flour and salt. Cut in shortening. Place beaten egg yok in cup; add milk to make 2/3 c. Add to flour mixture. Roll 1/2 dough to fit 15 x 11 pan. Sprinkle corn flakes over bottom crust. Place sliced apples over this. Mix sugar and cinnamon. Sprinkle over apples. Place remaining dough on top. Beat egg white and spread on top crust. Bake at 375 degrees for 50 minutes. Frost with powdered sugar frosting while hot. (Corn flakes deep the bottom crust from becoming soggy.
